Made from the juice of organically grown, fully ripened Trebbiano grapes, cooked and simmered for hours to a reduction called mosto cotto (must), then cooled in barrels and aged turning into vinegar.
No artificial caramel color commonly found in commercially available Balsamic Vinegar.
